Recipe of Financiers






English Version

100 g Almont powder
150 g Icing sugar
50 g Flour
150 g Egg whites
120 g light browned butter
2 g vanilla extract



1. Sifted together the almond powder and icing sugar, and flour then Tamis the product through.

2. Mix the tempered egg whites with spatula and make them moist
3. Then Pour the light browned butter while stirring with a spatula
finish by adding vanilla extract
4. Slowly incorporate the egg white Mixture into the Flour mixture.

5. Fill the buttered molds about 3/4 full, In either a rectangular molds metal or silicone
6. Bake in hot oven (220°C) 10 to 15 minutes

7. For individual pieces, start with hot oven and finish in medium hot
oven (200°)
8. Cool 5 minutes then demolded when remove from oven
